Ingredients:
2 ripe bananas
1.5 cups oat flour [old fashioned oats processed or blended into flour ]
1/3 cup coconut flour
1 tsp baking soda
1 tsp baking powder
1/4 cup stevia or honey
2 flax eggs [ 2 TB flaxseed mixed with 6 TB water]
2/3 cup almond butter or any nut butter
Dash of salt
Optional Toppings:
Raisins
Dark Chocolate Chips
Directions:
Preheat the oven to 350F and line a baking sheet with parchment paper.
Peel & Mash bananas with a fork until it forms a paste.
Add the oats to a blender and process for 30 seconds, or until a fine flour forms.
Add the oat flour, coconut flour, flax eggs, baking soda, baking powder, salt, stevia or honey, and almond butter to the banana mixture.
Mix thoroughly!
Use a Tablespoon to scoop around 2 Tablespoons of batter and form around 12 -15 cookies.
Use hands to press onto the tray
Top each cookie with raisins or dark chocolate chips [we put 2-3 choc chips and 2-3 raisins on each cookie]
Bake for 15-18 minutes, then remove from the oven and let them cool
Once cool, store in a loosely covered container at room temperature for up to 4 days.
You can also freeze these and reheat!
