Healthy Banana Almond Butter Oat Cookies


  • 2 ripe bananas

  • 1.5 cups oat flour [old fashioned oats processed or blended into flour ]

  • 1/3 cup coconut flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/4 cup stevia or honey

  • 2 flax eggs [ 2 TB flaxseed mixed with 6 TB water]

  • 2/3 cup almond butter or any nut butter

  • Dash of salt

Optional Toppings:

  • Raisins

  • Dark Chocolate Chips


  1. Preheat the oven to 350F and line a baking sheet with parchment paper.

  2. Peel & Mash bananas with a fork until it forms a paste.

  3. Add the oats to a blender and process for 30 seconds, or until a fine flour forms.

  4. Add the oat flour, coconut flour, flax eggs, baking soda, baking powder, salt, stevia or honey, and almond butter to the banana mixture.

  5. Mix thoroughly!

  6. Use a Tablespoon to scoop around 2 Tablespoons of batter and form around 12 -15 cookies.

  7. Use hands to press onto the tray

  8. Top each cookie with raisins or dark chocolate chips [we put 2-3 choc chips and 2-3 raisins on each cookie]

  9. Bake for 15-18 minutes, then remove from the oven and let them cool

  10. Once cool, store in a loosely covered container at room temperature for up to 4 days.

  11. You can also freeze these and reheat!
